Ingredients

  • 2 packages lean ground beef, browned and drained
  • 1 small onion, chopped
  • To taste garlic powder, garlic
  • To taste salt and Pepper
  • 1tsp cumin
  • 2 cans Ro-tel green chile diced tomatoes
  • 4 containers Chicken Broth (32 oz. size)
  • 4 cans chopped green chiles (pref. Hatch brand)
  • 6 potatoes, cubed with skin
  • To taste flour for thickening, around 4Tbsp
  • Recipe can be halved for two people

    Add all the ingredients to a large bot. Bring to a boil. Simmer until the potatoes are soft. Serve with heated, buttered flour tortillas.

    Additional spicing is permissible based on the tolerances of the diners.
