Ingredients
Preheat: 375 Yield: 48 cookies
Drain the crushed pineapple contents in a sieve or strainer.
Add dry ingredients in a large bowl, mix.
Mix in pineapple and coconut, this will add moisture to the mix. It will still be dry at this point.
Add remaining ingredients and mix with a sturdy wooden spoon. Once thoroughly mixed, spoon out small balls of dough onto cookie sheets.
Bake at 375 for 15 minutes.
